cucumber feta chicken smash sandwich.

This is hands down the BEST sandwich I've ever had in my life.

Last week while in Texas, we ate at Smash Burger, and I ordered the Cucumber Feta Chicken Sandwich (although its not listed on their menu on the website.) It was FANTASTIC. So fantastic that Laurel and I attempted to recreate it a couple days later at home.

It didn't turn out perfectly (the secret is to really smash the chicken thin) but it was still incredibly delicious. I think the cucumbers are the secret, they had such a flavor and crunch to the sandwich.

Ingredients:
-Chicken
-Toasted bun
-Spinach
-Feta cheese
-Cucumber
-Red Onion
-Tomato
-Avocado (optional)

-Cook the chicken We cooked it on the stove/griddle thing. However, the key is to really pound/smash (hence smash burger) the chicken as thin as you can both before you cook it, and while it cooks. Just keep smashing and smashing.
-Place the chicken on the toasted bun.
-Next put the feta cheese on the chicken. This will begin to melt the cheese, which is so yummy and creamy, no other sauce is needed.
-Put on the cucumber, red onion, tomato, and if so desire the avocado.
-Lastly is the spinach and then the bun on top.

to travel: the door to hell, turkmenistan

"The Door to Hell is a natural gas field in Derweze (also spelled Darvaza, meaning "gate"), Ahal Province,Turkmenistan. The Door to Hell is noted for its natural gas fire which has been burning continuously since it was lit by Soviet petrochemical scientists in 1971, fed by the rich natural gas deposits in the area. The pungent smell of burning sulfur pervades the area for some distance."

In 2010 the hole was ordered to be closed by the President of Turkmenistan. But as of now, it is still burning. Time is of the essence. I must go soon.

I first heard this song on the Vampire Diaries last year in just a demo version. I have since then been eagerly awaiting the full version to be released. Well worth the wait. I am completely in love with this song. (and bonus: many people are finding connections of lyrics in the song to The Fault in Our Stars, my favorite book.)

thursday. (baby franco edition.)

As much as I love the original (James) Franco, baby (Dave) Franco has been growing on me more and more as I see him in more roles and interviews, especially this one with Ellen.

While James seems extremely artistic and intellectual, Dave seems a little more normal.

And I like him even more after reading this quote by him:
[observation, age 27, on playing teenage roles] Everyone always says, especially in the business, it's great to look a lot younger than you are for longevity's sake. But sometimes I just want to look my damn age and play a character my age. I don't want to play high school again.
